At Rudy’s, we believe great pizza starts with great ingredients. That’s why we use only the best authentic produce, sourced directly from Italy.

Our suppliers are families who’ve spent generations perfecting their craft. We don’t just order from them, we know them. We’ve travelled to Italy to see where our ingredients come from and to meet the people behind them. Here are a few of the producers we’re proud to work with.

Neapolitan pizza is built on the holy trinity. With so few ingredients, there's nowhere to hide, so each one has to be the best it can be.

CAPUTO 00 FLOUR

The gold standard in Naples

Caputo Flour is a family business deeply rooted in Naples and its land. Brothers Carmine and Pasquale Caputo opened the mill in 1924, and three generations later the family still runs it.

Caputo is recognised as the best flour in Naples. We use their traditional 00 flour because it’s stronger and extra fine, which lets us stretch a pizza right over the edge of your plate. We add only yeast, salt and water.

Great flour is as much science as tradition. Caputo blends different wheats and checks the protein and gluten strength of each batch so the dough behaves the same every time. It’s then milled extra fine, which gives the dough elasticity, strength and softness all at once. The milling methods have been passed down through the family and are now backed by careful modern quality control.

When it comes to flour, Caputo know best.

LATTERIA SORRENTINA FIOR DI LATTE

Five generations of mozzarella

Latteria Sorrentina has been run by the Amodio family since 1880, and five generations on they’re still just as passionate about dairy.

Latteria Sorrentina is known for some of the finest mozzarella di bufala and fior di latte in Campania. We use their fior di latte for its perfect melt and stretch. The name means “flower of milk”, a nod to the quality of the fresh milk it’s made from.

Their process depends on freshness. They start with fresh local milk. The curd is worked while it’s still warm, then stretched and shaped by skilled hands until it’s soft and elastic. The result melts beautifully, with the creamy richness and slight tang that every Neapolitan pizza needs.

REGA STRIANESE SAN MARZANO TOMATOES

Grown in the shadow of Vesuvius

The Rega family have been doing things their way since 1965. They’re family-run, rooted in Campania, and they specialise in the San Marzano, the gold standard of Neapolitan pizza.

The plants grow in volcanic soil and are trained vertically up into the Mediterranean sun, a method passed down for centuries. The tomatoes are picked at peak ripeness, prepared carefully and packed quickly to lock in the flavour.

Why San Marzano? They’re long, gently ridged and bright red, with thicker flesh and fewer seeds than other tomatoes. They also taste stronger and sweeter. They’re so good that we simply crush them with a pinch of salt to balance the sweetness.

Soresina Latteria


Our Grana Padano comes from Latteria Soresina, a dairy co-operative in Lombardy that has been making it for more than a century. Every wheel is made with milk from the surrounding Po Valley and slowly aged until it's rich, nutty and full of those little crunchy crystals. Farmer-owned, aged to perfection.

Simonini


Our Parma ham comes from the Simonini family, who have been making it since 1968. Each leg is salted by hand with just a little sea salt. It's then left to age slowly giving it its sweet, delicate flavour and melt-in-the-mouth texture.

D'Amico


Our tinned and jarred goods come from D'Amico, a family business based near Salerno in Campania. D'Amico sources its vegetables, olives and other produce from Italy's best growing regions and preserves them carefully, so they keep their colour and flavour. That way we can bring a taste of southern Italy to our kitchen all year round.

Sterilgada


The mascarpone in our tiramisu comes from Sterilgarda, a dairy near the shores of Lake Garda in northern Italy. Sterilgarda mascarpone is made from fresh Italian cream, so it's thick, smooth and indulgent. Layered with espresso-soaked biscuits and a dusting of cocoa, it makes our tiramisu light and creamy. The perfect finish to every meal.
