NEAPOLITAN TECHNIQUE

For the past 3 years we have been refining our pizza making. We stick to traditional Neapolitan techniques and have learnt, for a perfect pizza – Naples style – There are five steps to follow.

FIVE STEPS TO PIZZA

1. The Dough – We make it fresh everyday and let is ferment for 24 hours

2. The ingredients – Keep it simple, but we only use the best possible and always try new things!

3. The Fire – Every Rudy’s pizzeria has a hand built, authentic pizza oven, made in Naples,

Getting these traditional, wood fired ovens to fire and calibrate is both an art and a science. But we believe the result is outstanding! .

4. Blaze the dough for just 60 seconds – Perfect pizza should not be crispy. Not when the dough is this fresh, the texture should be light and floppy. We blast at high heat for 60 seconds.

5. Eat! How you do it is up to you, True Neapolitans tear and folds. Prudes use a Knife and fork.
